Tim Wendelboe buy directly from farms in Ethiopia, Kenya, Colombia, Honduras and El Salvador, visit them each year, and have published an annual transparency report showing the price paid per kilogram to each producer since 2010. The coffee trees on his land were not planted by him but by his grandfather, who selected seedlings from wild coffee growing in the neighbouring Coche forest when he first established the farm. Those trees are still in production today, and the cultivar is recorded simply as Ethiopian heirloom — the genetic material of the forest rather than anything released by a breeding programme.\u003c\/p\u003e\u003cp\u003eCherries are picked selectively by hand by workers from the surrounding community and sorted before being held overnight in the cherry receiving tank. De-pulping happens the following morning. The parchment, mucilage still attached, is then fermented under clean water for around 24 hours, after which the coffee is graded and washed through a channel that strips the last of the mucilage and separates out the lighter beans.\u003c\/p\u003e\u003cp\u003eDrying takes place on raised tables under shade netting over 12 to 14 days, with the parchment raked through the day for evenness and defective beans picked out by hand as it dries. The lot comes off the tables at between 9 and 11.5% moisture. Each day's picking is stored separately in airtight GrainPro bags until its moisture and quality have been checked, and only then does it travel to the dry mill in Addis Ababa for cleaning, sorting and export preparation, where it is vacuum packed in sealed bags before shipping.\u003c\/p\u003e\u003cp\u003eThe coffee is certified organic.
