It's an Heirloom lot from the Lalesa Washing Station in Gedeb, which DAK tasted and selected themselves. \u003cstrong\u003eExpect notes of purple florals, citrus, baked peach and a touch of hops\u003c\/strong\u003e.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal\"\u003eCherries are picked by hand and sorted again afterwards, then fed into a hopper running down to a traditional Agaarde disc pulper, which strips the skin and pulp and grades the beans by density into first and second quality as it goes. The coffee then ferments under water in tanks — usually around 72 hours, though anywhere from 48 to 100 is within the norm. A second grading follows in water channels: the lighter, lower-density beans float off and are removed, leaving the denser, higher-grade lot behind.
