Ethiopian Heirloom varieties grown at 2100 metres provide the raw material for Lemon Spritz's naturally high-toned acidity and floral complexity. At this altitude, cherries develop slowly and accumulate significant sugar and aromatic complexity before harvest.\u003c\/p\u003e\n\u003cp\u003eWashed processing at Chelchele keeps the profile clean and focused. Cherries are depulped and the beans are wet-fermented before being washed in channels and dried on raised beds.
