It's an advanced fermentation Castillo \u003cstrong\u003egrown by Diego Bermudez\u003c\/strong\u003e at Finca El Paraiso, at 1,730 metres in Cauca, Colombia.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal\"\u003eThe profile was developed by DAK Coffee Roasters with Cata Export and Diego Bermudez, their sourcing partners in Colombia, and the processing is tightly controlled at every stage. The Castillo cherries go through a 48-hour anaerobic fermentation held at 20°C, followed by a thermal-shock wash.
