Rather than push the variety through a heavily manipulated process, the Rodríguez family keep this one to a straightforward washed method, trusting Caranavi's high-altitude growing conditions — around 1,650 metres — to do the work that a more complicated fermentation might otherwise be asked to do. Steep, cloud-forest terrain makes mechanisation difficult, which in practice means most of the work here — picking, sorting, drying — is still done by hand, lot by lot, rather than at scale.
