Silky Way comes from Jhoan's farm there, grown at 1750 MASL.\u003c\/p\u003e\n\u003cp\u003eDAK have worked with Jhoan's coffees before, and this lot continues the pattern: his coffees are consistently expressive, with a clarity in the cup that is not always a given at this altitude and with this kind of processing.\u003c\/p\u003e\n\u003cp\u003eThis particular lot is processed anaerobic washed. Cherries are pulped, then fermented in a sealed, oxygen-free environment before being washed, a method that tends to build brighter, more layered acidity than a standard washed process. Paired with Pink Bourbon, a variety already known for its floral, tea-like character, the anaerobic stage pushes the cup somewhere sparkling and complex: lemongrass, crisp green apple and white flowers running through it.\u003c\/p\u003e\n\u003cp\u003ePink Bourbon itself remains something of a mystery variety. Despite the name, genetic testing carried out in 2017 and again in 2023 found no relation to the Bourbon family at all; the results instead pointed to an Ethiopian landrace ancestry, the same broad genetic group that includes varieties like Geisha. How an Ethiopian landrace ended up growing in southern Huila is still not fully understood.
