dak-surf-jam-250g-ethiopia
DAK – Surf Jam 250g | Ethiopia

DAK Coffee Roasters' second summer release this year is Surf Jam, a natural Ethiopian that's dense and jammy, layered with notes of blackberry, cherry jam and dates.

This coffee comes from the Chelchele Washing and Drying Station, named after the village of Chelchele in the Gedeb district of Ethiopia. The station processes coffee grown at elevations ranging from 1,900 to 2,100 metres above sea level, with the station itself sitting at 2,000 metres. It's a well-equipped site, running 14 standard fermentation and washing tanks, 130 to 150 drying beds, and two water tanks with a capacity of 90,000 litres each. A 30 by 16-metre warehouse handles the dry coffee preparation.

Around the station, coffee trees of the Heirloom variety are intercropped with Enset, beans and avocado trees, growing in the region's fertile red-brown soil — a traditional Ethiopian farming approach that supports biodiversity and soil health alongside the coffee itself. This intercropping is typical of smallholder farms across the Gedeb district, where coffee has long been grown alongside food crops rather than as a single-crop plantation.

Surf Jam is naturally processed: ripe whole cherries are dried slowly on raised beds rather than being pulped first, allowing the fruit sugars in the cherry to concentrate into the bean as it dries. It's this slow, fruit-intact drying that gives natural-process coffees their dense, jammy character — and it's exactly where Surf Jam gets its name. Expect a cup bursting with blackberry, cherry jam and dates: sweet, fruit-forward and full of body, with the concentrated sweetness that comes from cherries grown at 1,900 to 2,100 metres and processed with care at the Chelchele site.

The espresso roast profile suits the coffee's dense, jam-like sweetness well. Pulled as a shot, the blackberry and dates come through thick and syrupy, while the cherry jam note lingers into a long, fruit-forward finish. It's a coffee built for warm-weather drinking, whether that's a straight shot or over ice.

Freshly roasted by DAK Coffee Roasters in Amsterdam and imported to the UK by ROAST EDIT Co.
