This release brings back a coffee that had been away for a while — a microlot of Ombligon, a genuinely rare variety, grown above 1,750 metres. It's the fourth Nestor Lasso lot ROAST EDIT has carried, following the Estate #1 espresso and the two Typica Mejorado releases (washed and natural) — each one highlighting a different variety or process from the same farm rather than repeating the same coffee season after season.\u003c\/p\u003e\n\u003cp\u003eThe processing here is where Lasso's reputation for control really shows. Ripe cherries are picked at full maturity, then taken through an extended oxidation stage: 48 hours exposed to open air, a 12-hour rest, then a further 60 hours with the temperature actively held between 30–40°C. From there the cherries go into sealed tanks for 24 hours of anaerobic fermentation, with the mosto — the sweet juice released from the cherries — recirculated through the batch to keep flavour development even throughout. The process is deliberately halted with a thermal shock at 60°C, locking the aromatics in place before drying begins. Drying itself combines sun exposure with a dehumidifier over roughly 60–70 hours at around 35°C, brought down to a final moisture content of 10.5–11.5%.\u003c\/p\u003e\n\u003cp\u003eIt's an unusually hands-on sequence, and it produces an unusually vivid cup: intensely fruity, with bright, lively acidity and a jammy sweetness — strawberry jam and raspberry up front — balanced out by a softer peach note underneath.
