Elias Roa bought it in 2011, after it had been left abandoned for some time, and today he runs it with his wife Bellanid Sanchez and their family. Since 2012 Elias has reworked the farm step by step: picking only ripe cherries, separating lots by cultivar, and slowing down processing and drying. He has also built a new family home, a dormitory for the seasonal pickers and a bigger kitchen.

Caturron is a local cultivar found in Huila. Its exact origin is unknown, but DNA testing of the green beans points to a cross between Timor Hybrid and Bourbon or Caturra, which makes it a close genetic relative of Variedad Colombia. In the field it is distinct and very uniform, with noticeably oblong beans and good resistance to leaf rust. In the cup it is just as recognisable, with a herbal, bell-pepper character running through fruit and floral notes.

Picking is selective, done by hired pickers under Elias's supervision, and the cherries are hand sorted so that only ripe fruit is processed together. They rest overnight in an open-air hopper and are de-pulped the following morning. The parchment ferments for 24 hours in stainless steel tanks, stopped as soon as the mucilage comes away easily. Washing is done with an eco-mill, a mechanical demucilager that uses around half a litre to a litre of water per kilo of coffee, against 50 to 100 litres for conventional washing. The coffee then soaks for a further 24 hours in clean water in tiled tanks, with floaters removed throughout.

Drying runs 20 to 30 days in parabolic dryers and on beds under shade netting, raked through the day, until the moisture is below 11%. The coffee is then stored in GrainPro bags and vacuum packed before shipping.

Herbal, floral habanero and papaya, with bell pepper and tropical fruit side by side.
