Tim Wendelboe

Tim Wendelboe is a specialty coffee roastery in Oslo, Norway, founded in 2007 by the former World Barista Champion and World Cup Tasters Champion of the same name. It is the roastery most closely associated with Nordic light roasting — profiles built around sweetness, acidity and clarity rather than roast character.

Every coffee is a single origin. Tim Wendelboe buy directly from farms in Ethiopia, Kenya, Colombia, Honduras and El Salvador, visit them each year, and have published an annual transparency report showing the price paid per kilogram to each producer since 2010. Several of those relationships now run more than a decade deep, and the roastery farms its own land in Huila.

The range changes with each harvest and is roasted to order every week. A lighter roast leaves more of the coffee's origin character intact, which in turn demands better green coffee — the sourcing and the roasting are two halves of the same argument.
