Don Héctor Díaz farms 1.5 hectares at La Armenia in Pitalito, Huila — a true smallholding, at 1,800 metres. The processing is where the care shows: cherries are flotation-sorted, fermentation is monitored throughout, and the coffee dries slowly in cherry on raised beds.

Pink Bourbon as a natural is a generous combination: the variety brings florals and a silky acidity, the process adds fruit and juiciness, and this lot keeps it all clean — no boozy wildness, just a sweet, fruity, floral cup.

There aren't many jars of this one.
