A Matter of Concrete (A.M.O.C.) – /060 Yoiner Mosquera 240g | Colombia
A.M.O.C. series: UNCOMMON
Yoiner Mosquera farms at El Portal in Palestina, Southern Huila, where his family has grown coffee for around 80 years — his grandparents helped found the municipality itself.
The process is the interesting bit: overripe cherries rest for 72 hours in an oxygen-free (anoxic) environment, still in husk, before drying slowly in a greenhouse for around 20 days. It's a controlled way of getting natural-process intensity without losing the thread.
The cup: sweet apricot jam and candied orange peel, process-forward sweetness, a bright juicy finish. This was the competition coffee for the first Sibarist × A.M.O.C. Cup in Rotterdam.
Freshly roasted by A Matter of Concrete (A.M.O.C.) in Rotterdam and imported to the UK by ROAST EDIT Co.
