About This Coffee
Bonita is a honey-processed Geisha from Jorge Rojas at Finca El Proceso in Tolima, Colombia — bright and structured, but delicate with it. Expect honeydew, lychee, elderflower and nectarine.
Grown at 1,850 metres, the lot was fermented in two stages over 48 hours. For the first 24 hours the whole cherry sat in sealed, lidded buckets, where an anaerobic fermentation began at a pH of 6.3. Jorge then pulped the coffee and returned it to a lidded bucket for another 24 hours, finishing at a pH of 3.9. Temperatures ran between 24°C in the day and 19.5°C at night. Rather than wash it thoroughly, he gave it only a light rinse, leaving the varietal character to stand out.
Drying happened entirely in a marquesina, with two deliberate interruptions. Jorge lifted the coffee from the beds on the afternoon of the fourth day and held it until the sixth, then paused it again between days twelve and fourteen. In his view this pulls out more fruit, gives a cleaner and fuller cup, and lifts the quality another step.
The result is a Geisha that stays light on its feet — floral and fruit-led, with enough structure underneath to keep it composed.
