About This Coffee
Finca Voo is located in Copey, in Costa Rica’s renowned Tarrazú region, where elevations between 1,960 and 2,000 metres above sea level create ideal conditions for producing dense, expressive coffees. Run by Ivan Solis and his family, the 40-hectare farm has quickly gained recognition for its meticulous approach to fermentation and post-harvest experimentation. In 2024, Finca Voo placed first in the Experimental category at the Cup of Excellence, further establishing its reputation as one of Costa Rica’s most exciting producers.
Together with his wife Leandra Cordero, Ivan also operates Beneficio Santa Fe, the mill where all processing takes place. Their work combines technical precision with innovative fermentation methods designed to push sweetness, structure and aromatic complexity while maintaining balance and clarity in the cup.
This Red Catuaí lot is processed using an anaerobic natural method. After harvesting, the cherries ferment for 48 hours in sealed black plastic bags before being transferred directly onto raised African beds for slow drying over approximately 19 days until reaching a final moisture content of 10%. During peak heat, the beds are covered with protective mesh — a technique inspired by traditional Ethiopian drying methods — helping preserve stability and cup quality throughout the process.
The cup is rich, sweet and deeply comforting, with notes of orange, tropical fruits and caramel layered over a dense, syrupy body. Bright citrus character brings freshness and definition, while the extended fermentation enhances sweetness and texture without overwhelming the profile. A modern Costa Rican natural with impressive balance, depth and clarity.
