About This Coffee
Rumba is a beautifully expressive Ethiopian natural from DAK Coffee Roasters that showcases just how exciting modern fermentation techniques can become when handled with precision.
Produced at Gatta Farm in Sidama Bensa at around 2,120 metres above sea level, this lot uses local Ethiopian landrace varieties processed as a yeast-assisted semi-anaerobic natural. The project was developed in collaboration with one of DAK’s long-term partners, who returned to Ethiopia for a third consecutive year to continue experimenting with fermentation and yeast cultivation.
The result is intensely fruity but remarkably controlled. Expect notes of stewed strawberries, apricot and brown sugar, supported by a silky body and a subtle boozy character that adds complexity without overpowering the cup.
Gatta Farm itself has a unique story. Originally natural forest land, the site was identified by Daye Bensa cofounder Mulugeta Dukamo during the construction of Gafisse Station. Coffee planting began in 2013, with the drying station established in 2017. The surrounding forest still plays an important role today, providing natural shade for both the farm and drying infrastructure.
The project also has a strong community focus. Plantation work, harvesting and processing are carried out largely by local residents, with women heavily involved in quality control and processing. Alongside the drying station, Gatta Farm now includes accommodation facilities and a dedicated training centre focused on coffee processing education.
In the cup, Rumba captures the more refined side of experimental Ethiopian coffee — highly expressive and fruit-driven, but still clean, balanced and structured throughout.
