About This Coffee
Cream Donut is a yeast inoculated natural Caturra and Chiroso from Finca El Encanto in Pitalito, Colombia, developed in collaboration with Cata Export. This is advanced fermentation pushed to deliver a cup that is truly unique.
Rather than relying on ambient fermentation, the cherries are inoculated with a specific yeast strain before processing begins, creating a controlled and repeatable flavour outcome. The cherries then ferment as a natural — whole fruit, skin on — with the yeast working through the entire fermentation period. Grown at 1650 metres, the result is a coffee with elevated sweetness, significant aromatic complexity, and a flavour profile that lands firmly in dessert territory.
In the cup: chocolate milk (Nesquik), cherry filled doughnut, and vanilla. Creamy, decadent, and intensely sweet. Works brilliantly as a straight espresso or as the base of a milk-based drink, where its richness plays against the dairy without needing any added sweetness.
