About This Coffee
Golden Waffle is a honey-processed Typica from Hacienda Pillcocaja, a family farm in the Azuay province of southern Ecuador run by Ana María Crespo and the Crespo family. DAK buy from Pillcocaja directly, and this lot comes from the 2026 harvest, grown at 1,650 metres.
The farm keeps its processing close to the trees. The wet mill sits around 800 metres from the planting, so cherry reaches it soon after picking, and the water used in the mill is drawn from a well on the property. Drying takes place on raised African beds under shade cover.
Honey processing sits between washed and natural. The skin of the cherry is removed, but the sticky layer of fruit underneath, the mucilage, is left on the bean while it dries. The name refers to that layer rather than to any honey, and the method is generally associated with more body and sweetness than a fully washed coffee.
Typica is one of the oldest cultivated Arabica varieties and the plant much of Latin American coffee was originally built on. It yields less than modern cultivars and is more vulnerable to disease, so farms that keep it are choosing the cup over the harvest weight. Ecuador is one of the places where it is still grown.
In the cup: maple syrup, candied orange and waffles. Sweet and syrupy, with candied citrus running through the baked flavours from the first sip to the finish.
