About This Coffee

Purple Rain is the first anaerobic natural of the new Ethiopian harvest from DAK Coffee Roasters — a Guji lot processed at the Layo Station in the Hambela area, where the focus on precision and fruit-driven processing makes it one of the most vivid coffees in the current DAK lineup.

Layo Station sources its cherries from the Hambela area of Guji, one of Ethiopia's most prized coffee-growing regions. The station works with local Heirloom varieties that have evolved naturally over centuries in the region's high-altitude forests. Farmers selectively hand-harvest cherries at peak ripeness before sorting them carefully to ensure only the finest quality fruit enters processing.

The defining feature of Purple Rain is its strict anaerobic fermentation protocol. Rather than fermenting in open air, the ripe cherries from Hambela Layo are sealed inside oxygen-free tanks, where microbial activity slows and becomes far more controlled. This creates an environment that enhances sweetness, fruit complexity, and aromatic depth through slow microbial development. Once fermentation is complete, the coffee moves to raised African drying beds, where it sun-dries gradually under close supervision. Regular turning ensures even drying and maintains cup clarity. Once the desired moisture level is reached, the coffee is rested, hulled, and prepared for export.

The result is a cup defined by a single chromatic direction: purple fruits, purple florals, wild berries — every element of the profile pointing the same vivid way. An expressive, high-saturation filter coffee that earns its intensity honestly.
