About This Coffee

 

Toffee Spin is a natural-processed community lot from Aponte, an Inga indigenous reserve high in Nariño, in southern Colombia. It's a clean, sweet natural — balanced and silky rather than heavy — with forest fruits, toffee and black tea in the cup.

Aponte sits in the north of Nariño, a high-altitude coffee department in southern Colombia that runs down to the Ecuadorian border. The land belongs to the Inga, an indigenous people descended from the Incas, and is held and farmed collectively by a community of several thousand. Coffee here grows high on nutrient-rich volcanic soils, this lot at 2,050 metres, where cool temperatures slow the cherries' development and concentrate their sugars — conditions that suit the sweet, clean naturals the area has become known for.

Rather than a single farm, Toffee Spin is pooled from smallholders across the community, each processing their own harvest before the lots are brought together. The producers here have moved well beyond the washed processing that dominates most of Colombia, working instead with honey and natural methods and experimenting across fermentation and a range of cultivars. This one is a field blend — several varieties grown and picked together — which is part of why the cup holds more than one register at once: the berry side, the caramel side, and the drier, tea-like finish.

As a natural, the cherries are dried whole with the fruit still on, which is where the sweetness and rounded body come from. At this elevation the drying runs slow and cool, and the result is unusually clean for the style: forest fruits up front, toffee through the middle, and a black-tea note closing it out.
