About This Coffee
Los Patios Geisha is one of the most distinctive coffees in the Manhattan world class lineup — a co-fermented Geisha from the Huila region of Colombia that opens with vibrant notes of peach iced tea and ripe apricot before developing into a layered floral composition of apricot blossom, elderflower, and lavender, finishing with the soft sweetness of vanilla. Complex, elegant, and strikingly expressive.
The coffee is grown by Juliana Serna and Alberto Gutierrez on their farm, Los Patios, in the hills of Huila at 1,600 to 1,900 metres above sea level. Cherries are sourced from a network of small producers at equivalent altitude, all contributing to a lot defined by the exceptional conditions of the region: dramatic diurnal temperature swings, rich volcanic soils, and the kind of extended cherry maturation that builds complexity in the bean before it ever reaches the processing stage.
What distinguishes this lot is the processing: an aerobic co-fermentation developed by Coffee Quest R&D, applied here for the first time with Geisha. After depulping, the cherries undergo an initial fermentation at origin before arriving at Los Patios, where peach concentrate and a proprietary solution are introduced to drive targeted flavour infusion. A 48-hour co-fermentation follows, after which the coffee is dried over 12 to 16 days under constant monitoring to protect the bean's physical integrity. The goal throughout is not to mask the Geisha's delicate character but to enhance it — the peach notes amplify what the variety already does naturally rather than replacing it.
The result is a coffee with layered fruit clarity, elegant floral structure, and a lingering sweetness that makes it especially rewarding as a filter coffee. Tasting notes: peach ice tea, apricot blossom, vanilla.
