Sookoo Coffee was founded in 2018 by Ture Waji and his brother Assefa, at Odo Shakiso in the Oromia region of Ethiopia. They buy from the kebeles immediately around the site, keeping each lot separate so it still tastes of the particular ground it grew on. This one is from Shoondhisa kebele, in Guji, at 2173 metres above sea level.

The trees are Gibirinna 74110 and Serto 74112 — two of the selections released by the Jimma Agricultural Research Center in 1974, chosen at the time for their resistance to coffee berry disease.

What sets this lot apart is what happens before the drying beds. The cherries spend 48 hours sealed in plastic barrels, fermenting without oxygen, a stage a conventional natural does not have at all. Only after that do they go out to dry whole on raised beds, over 15 to 20 days, in the way any natural would.
