About This Coffee

BPM — Blueberry Pie Magic — belongs to People Possession's Chromatic Index blends, the three-letter series they build alongside their single-lot releases. It is assembled rather than sourced from one place: an Ethiopian component and a Colombian one, put together to arrive at a particular flavour rather than to represent a single farm or region.

The Ethiopian side is 74110, one of the improved selections developed by Ethiopia's Jimma Agricultural Research Center and now planted widely across the country's southern growing areas. The Colombian side is Caturra, a natural mutation of Bourbon and long one of the mainstays of Colombian coffee farming. One of the two components is processed as a washed coffee, with the fruit removed from the seed before drying. The other is co-fermented with red fruits.

Co-fermentation means the fermentation is not left to the coffee cherry alone. Fruit goes into the tank alongside the coffee, and the sugars and acids it carries feed into the same microbial activity that would otherwise be working only on the cherry's own mucilage. The flavours that come out the other side are not ones the coffee would have produced by itself, which is the reason for doing it.

Blueberry pie leads the cup, and it reads as cooked fruit rather than fresh — nearer the filling than the berry. Raspberry ripple ice cream follows, which is as much a texture as a flavour: a rounded, creamy body with a sharper line of berry running through it. Vanilla sits beneath both and holds the sweetness together.
