The Holguín-Ramos family farms under the Inmaculada Fellow Farms banner in Valle del Cauca, at altitudes ranging from 1,700 up to 2,000 metres — a broad enough spread that lots from this project can vary noticeably year to year depending on which parcels go into a given harvest. This particular lot is built around Papayo, a variety that's still uncommon enough in Colombia that most drinkers won't have encountered it outside a handful of experimental-focused farms.

Papayo is processed here as a natural — cherries dried whole rather than pulped first, letting the fruit's sugars ferment slowly against the parchment throughout drying. That slower, fruit-in-contact fermentation is what tends to produce the dessert-like, confectionery character naturals are prized for, and it shows clearly in this lot's profile.

In the cup: vanilla milkshake leads, thick and sweet rather than subtle, with raspberry providing a tart counterpoint and an orange-chocolate-chip note rounding out the finish — genuinely more like a dessert than a typical fruited natural. It's an unusually specific and playful flavour combination for a single lot, and one that leans firmly into what natural processing does best rather than trying to mask it.
