About This Coffee

NBA — New Berry Addiction — is one of People Possession's Chromatic Index blends, the three-letter series the Paris roastery builds alongside its single-lot releases. Like the rest of that series it is assembled to land on a particular flavour rather than to represent one farm or one region, and each component is chosen for what it contributes to the whole.

It draws on two origins, Ethiopia and Colombia, and on two different approaches to processing. One component is washed, the fruit stripped from the seed before drying. The other is co-fermented with red fruits.

Co-fermentation means the fermentation is not left to the coffee cherry alone. Fruit goes into the tank alongside the coffee, and the sugars and acids it carries feed into the same microbial activity that would otherwise be working only on the cherry's own mucilage. The flavours that come out the other side are not ones the coffee would have produced by itself, which is the point of the technique.

Wild strawberries lead the cup, sharper and less rounded than a cultivated strawberry. Candied lemon follows, carrying the concentrated sweetness and slight chew that candying gives citrus rather than the clean acidity of fresh fruit. Red fruits fill in beneath both, broad rather than specific, and hold the middle of the cup together.
