About This Coffee
Darío Rodríguez has worked in coffee since 1975, starting out as a boy helping his parents on the family farm in Gigante, in Colombia's Huila department. He inherited that farm — Finca El Recreo — and ran it as commercial coffee for most of his life. Around seven years ago he changed direction and committed it to specialty, drawing on what his parents had taught him and a good deal of his own study. Pink Bourbon is one of the varieties he took on as part of that shift, alongside the Caturra, Castillo and Colombia he also grows.
El Recreo sits at 1,670 metres in the hills around Gigante. Huila, in the country's southwest, is one of Colombia's most established specialty regions: volcanic soil, high altitude and reliable water off the Colombian Massif, all of which tend to show up as clarity in the cup.
Pink Bourbon has a slightly tangled history. It was long taken to be a natural cross of red and yellow Bourbon, but more recent genetic work suggests it isn't really a Bourbon at all, and most likely traces back to an Ethiopian landrace. Whatever the lineage, it's sought after in Huila for its sweetness and aromatic lift.
This lot is washed. The cherries are pulped and fermented for around 40 hours, then dried on raised beds — a clean, controlled approach that suits the variety's floral and fruit character. Tanat roasts it for espresso and finds orange, apricot and raspberry, with high acidity and a rich, silky body. They scored it 87.
