TANAT – Finca Zarza [Pacamara Advanced Washed] 200g | Colombia
Finca Zarza, in Huila, is run by brothers Jhonatan and Johan Gasca, and has become one of the more talked-about names in competition-grade Colombian coffee — Jonathan Gasca was one of the producers 2025 World Barista Champion Jack Simpson worked with directly on unique processing methods for his competition coffees, and coffee from Finca Zarza was used in the winning routine. This particular lot won't necessarily be the exact one that made it into that routine, but it comes from the same farm and the same processing programme.
The variety is Pacamara — a naturally large-beaned cross of Pacas and Maragogype first developed in El Salvador, prized for combining big cup volume with real clarity when processing is handled carefully. Grown between 1,550 and 1,800 metres, it's put through what Zarza calls an "advanced washed" process — the farm's own term for a washed method that pushes past a standard washed process for extra aromatic intensity while keeping the clean structure washed coffees are known for.
In the cup: raspberry, hibiscus and rose tea — a floral, red-fruit profile with real clarity, characteristic of the farm's more experimental washed lots.
