TANAT – Nestor Lasso [Typica Mejorado Natural] 200g | Colombia
Nestor Lasso grows this lot on his El Diviso farm in Pitalito, Huila, above 1,750 metres. Typica Mejorado is genuinely rare in Colombia — genetic testing has identified it as a cross between Bourbon and an Ethiopian landrace, which explains a cup profile that borrows from both sides of that lineage: Bourbon's fuller sweetness alongside the more aromatic, floral complexity typically associated with African varieties. The grains themselves are elongated and unusually dense, with a high sugar content that becomes especially relevant once fermentation begins.
Lasso puts this variety through a controlled natural anaerobic process, sealing whole cherries away from oxygen to let that high sugar content ferment slowly and develop complexity before drying — the same meticulous, precision-first approach that defines his other lots, just applied to preserve the cherry's fruit rather than washing it away. It's exactly the kind of technical, deliberate work that's made Lasso and El Diviso a name TANAT keeps coming back to.
In the cup, that combination of rare variety and careful natural processing shows up as a genuinely striking profile: blackberry, raspberry, black cherry, violet and watermelon, layered rather than one-note — floral, fruity, and a little exotic all at once. It's a technically accomplished coffee at a price that's still accessible for what it represents in the variety alone.
