Tim Wendelboe – Los Pirineos Pacamara 250g | El Salvador
Los Pirineos sits in the Tecapa-Chinameca range in Usulután, El Salvador, and the farm's association with Pacamara runs deeper than most. Gilberto Baraona planted a broad selection of the cultivar there over many years and took a string of top-ten placements at the El Salvador Cup of Excellence with it before he died. His son Diego now runs the farm and continues that work.
Pacamara itself is a cross between Pacas and Maragogipe, and an unusually unpredictable one. It was distributed to Salvadoran farmers before it had stabilised as a cultivar, which means seed taken from an existing tree does not reliably reproduce the parent. Plant it and you may get something exceptional or something ordinary. That variability is why a farm with decades of selection behind it matters — the trees at Los Pirineos represent choices made over a long period rather than a single purchase of seed.
This lot is washed. Tim Wendelboe describe the cup as intense and fruity, with tart red berries, stone fruit and dark chocolate.
