DAK – Berramisu 250g | Costa Rica
Aquiares Estate sits in Turrialba, in the shadow of the volcano of the same name, and it is one of the partners DAK buy from year after year rather than lot by lot. This is their Esperanza, grown at 1200 metres.
Esperanza is worth a word, because it is not a variety most people will have drunk. It is a hybrid of Sarchimor T5296 and the Ethiopian landrace ET25 — a cross bred for resilience that has turned out to have real cup quality behind it, which is not the usual story with disease-resistant hybrids. Aquiares have planted it in quantity.
The lot is processed as a natural, and DAK describe the result as syrupy. In the cup it runs sweet and fruit-forward: strawberry first, then tropical fruit, with chocolate milk underneath giving it the body that makes it work as an espresso.
