About This Coffee
The beloved Pacamara from Finca Zarza returns — this time with a cleaner, more refined expression while still retaining the vibrant character that made previous releases so memorable.
Produced for DAK Coffee Roasters, this experimental Pacamara undergoes an intricate series of aerobic and anaerobic fermentation stages. The result is a coffee that feels intensely expressive, but with great clarity, balance and flavour separation in the cup.
Expect notes of cherry lollipop, strawberry and citrus, supported by juicy sweetness and a silky texture. Compared to previous harvests, this release feels less boozy and more structured, allowing the floral and citrus characteristics to shine more clearly.
The processing is exceptionally detailed. Fully ripe cherries are hand-picked before undergoing 48 hours of open-air oxidation followed by 60 hours of anaerobic fermentation in sealed bags. After depulping, the coffee ferments again alongside the mossto for another 60 hours, building further complexity and depth.
To preserve the aromatics developed during fermentation, the coffee then undergoes thermal shock washing using hot and cold water before being dried slowly in silos over 10–14 days.
This is a great example of how modern processing can be used not simply to maximise intensity, but to create a cleaner and more refined version of an already highly expressive coffee.
For us, it captures a direction modern specialty coffee is increasingly moving towards: experimental processing with greater precision, balance and drinkability.
