About This Coffee

Macaron is one of DAK Coffee Roasters’s most recognisable and talked-about coffees — an intensely expressive Red Bourbon from Jhoan Vergara at Finca El Diviso in Huila, Colombia.

This limited advanced fermentation natural is unmistakably DAK: playful, fruit-forward and unapologetically bold. Expect vibrant notes of raspberry macaron, strawberry jam and buttercream, layered over a rich, silky body that somehow manages to remain remarkably clean despite the intensity of the processing.

Produced by Jhoan Vergara in collaboration with neighbours Nestor and Adrian Lasso, El Diviso has become one of the most exciting names in modern Colombian coffee. Together, the farms of El Diviso and Las Flores have built a reputation for pushing fermentation and post-harvest processing to extremely high levels while still maintaining precision and cup clarity.

The processing behind Macaron is exceptionally detailed. After careful hand harvesting, the cherries undergo multiple fermentation stages including controlled oxidation, anaerobic fermentation and thermal shock washing using hot water before slow solar drying over several weeks. The result is a coffee with enormous aromatic intensity and layered sweetness.

Despite its highly expressive profile, Macaron never feels gimmicky. The fruit character is huge, but underneath it sits real structure, balance and craftsmanship. It is one of those coffees that immediately divides opinion in the best possible way — unforgettable from the very first cup.

We have also found Macaron particularly interesting to revisit after extended rest. Early on, the fermentation can feel almost overwhelming, but after a few additional weeks the cup often becomes far more integrated, allowing the sweetness and creamy dessert-like character to really shine.
