DAK – Macaron 200g | Colombia
Macaron comes from Finca Las Flores in Pitalito, Huila, a family farm founded more than thirty years ago by Edilberto Vergara and Nubia Ayure. Today their sons, the brothers Johan and Diego Vergara, run its 14.5 hectares at 1,750 metres above sea level, with Diego overseeing production, fermentation and drying. This is the 2026 harvest.
Red Bourbon is one of several varieties grown at Las Flores, alongside Tabi, Java, Maracaturra, Pink Bourbon, Geisha and Caturra Chiroso. For this lot, only ripe cherries measuring between 24 and 28° Brix are selected before processing begins.
The process is one of the most involved in DAK's range. The whole cherries are given a thermal shock and then fermented anaerobically for 60 hours. A 12-hour oxidation stage follows, then a further 24 hours of submerged anaerobic fermentation. A second thermal shock at 55°C comes next, before around 60 hours of mechanical drying with a dehumidifier. Every stage is controlled, and the whole sequence is built to deliver a specific profile that can be repeated from one harvest to the next.
Raspberry, strawberry jam and buttercream lead the cup. It is big, juicy and seriously sweet, with a deep, jammy character from start to finish.
