DAK – Cosmo Plum 250g | Colombia

Cosmo Plum is a collective lot rather than a single farm's coffee — cherry harvested around Buesaco in Nariño, from farms sitting between 1600 and 2000 metres on volcanic soil. It exists because of the work DAK do with Fusion Coffee Exporters and Nordic Approach, who assemble lots like this one out of many small deliveries.

The processing is honey, and that is where the character comes from: mucilage left on the seed during drying, building the sweetness and the jammy quality that runs through the cup.

The notes are purple plum, grapes and brown sugar — dark fruit rather than bright, with a sweetness that holds up under milk.
