DAK – Fluffy Petals 200g | Ethiopia
About This Coffee
Fluffy Petals is DAK Coffee Roasters' first washed Ethiopian of the season — the arrival they look forward to most each spring. It's an Heirloom lot from the Lalesa Washing Station in Gedeb, which DAK tasted and selected themselves. Expect notes of purple florals, citrus, baked peach and a touch of hops.
Cherries are picked by hand and sorted again afterwards, then fed into a hopper running down to a traditional Agaarde disc pulper, which strips the skin and pulp and grades the beans by density into first and second quality as it goes. The coffee then ferments under water in tanks — usually around 72 hours, though anywhere from 48 to 100 is within the norm. A second grading follows in water channels: the lighter, lower-density beans float off and are removed, leaving the denser, higher-grade lot behind. The parchment is soaked in clean water and dried on raised beds for somewhere between 8 and 20 days, spread in layers of 2 to 8 cm that shift with the climate, the type of beds and the stage of drying.
Grown at 2,150 metres, it's a clean, bright, floral washed Ethiopian — about as good an argument for the new season as you could ask for.
