Lemon Spritz is DAK Coffee Roasters' summer filter offering from Ethiopia — a washed Heirloom from the Chelchele washing and dry processing site that delivers a crisp, vivid profile sitting perfectly at the intersection of citrus clarity and floral softness. DAK's team selected this lot during a sourcing trip to Ethiopia earlier this year, making it one of the few coffees in the lineup chosen firsthand at origin.

The Chelchele washing and dry processing site has built a reputation for producing clean, precise washed Ethiopians with excellent fruit clarity. Ethiopian Heirloom varieties grown at 2100 metres provide the raw material for Lemon Spritz's naturally high-toned acidity and floral complexity. At this altitude, cherries develop slowly and accumulate significant sugar and aromatic complexity before harvest.

Washed processing at Chelchele keeps the profile clean and focused. Cherries are depulped and the beans are wet-fermented before being washed in channels and dried on raised beds. This removes the fruit layer entirely, leaving the cup to express the bean itself — the terroir, the variety, and the elevation — with nothing to distract from its inherent character.

The result is a cup built around clarity and vivacity: lemon ice tea acidity, apricot jam sweetness, and a clean white floral finish that fades slowly and cleanly. It's a summer coffee in every sense — refreshing, precise, and immediately approachable while remaining genuinely complex for those paying attention.
