DAK – Lemon Squeeze 250g | Ethiopia
About This Coffee
Lemon Squeeze is a washed Ethiopian from the Rumu Damo Washing Station — a textbook version of the style: bright and citrus-led, with a juicy, lively character and notes of lemon, nectarine and wild flowers.
The station sits high in the Arbegona district of Sidama, at around 2,300 metres, which puts it among the highest-grown coffee in Ethiopia. It's run by Asefa Dukamo of the Daye Bensa group and draws cherry from several hundred smallholders nearby, mostly local landrace varieties built around the 74112 selection. The track record matches the altitude — lots from Rumu Damo placed second, third and eighth at the 2020 Ethiopia Cup of Excellence.
Once the cherries arrive, they're floated in water to sort them and remove the lighter floaters, then pulped and given a 48-hour wet fermentation. After washing, they're laid out to dry on raised African beds for 8 to 12 days, depending on the weather.
Freshly roasted by DAK Coffee Roasters in Amsterdam and imported to the UK by ROAST EDIT Co.
