DAK – Lush Buds 250g | Ethiopia
About This Coffee
Lush Buds is a natural Ethiopian espresso from the Siko washing station in the Uraga district of Guji — a creamy, floral lot that DAK describe as one of their most approachable naturals, with a profile built around soft fruit and white flowers rather than the intense, fermented character you might expect from a Guji natural.
The Siko washing station sits in Siko village in the highlands of Uraga Woreda, Guji, at an altitude of 2100 – 2350 metres. This is some of the highest-grown coffee in Guji, and the altitude shows in the cup: high-grown Heirloom varieties develop slowly, producing denser beans with more complex sugars and a naturally refined sweetness. The station works with cherries from local smallholder farmers whose plots are spread across the surrounding Siko area.
Natural processing at Siko involves careful cherry selection at harvest — only ripe, uniformly coloured cherries are accepted — followed by drying on raised African beds at altitude. The drying process at Siko is slower than at lower-lying stations, which allows the fruit sugars to integrate fully into the bean over a longer period. This extended drying is one of the key reasons Siko naturals tend to have such a clean, refined fruit profile compared to faster-dried lots from lower elevations.
In the cup, Lush Buds delivers raspberry cream, red plum, and white flowers. A natural that prioritises elegance over intensity — a coffee that works beautifully as an espresso, with enough sweetness and body to hold up to milk while retaining its floral identity.
