About This Coffee

Pistachio, cardamom, vanilla cake and chai — Milky Cake is exactly what the name suggests, a dessert in a cup. It's an advanced fermentation Castillo grown by Diego Bermudez at Finca El Paraiso, at 1,730 metres in Cauca, Colombia.

The profile was developed by DAK Coffee Roasters with Cata Export and Diego Bermudez, their sourcing partners in Colombia, and the processing is tightly controlled at every stage. The Castillo cherries go through a 48-hour anaerobic fermentation held at 20°C, followed by a thermal-shock wash. Drying is handled just as precisely — 34 hours at 35°C and 25% relative humidity, brought down to a grain moisture of 10 to 11%.

It's advanced, controlled-fermentation coffee at its most expressive — and one of our own favourites, consistently among the most popular coffees we stock with specialty drinkers.
