About This Coffee
Finca Las Flores began in 1990, when Edilberto Vergara and Nubia Ayure planted their first coffee on just two hectares in Acevedo, Huila. Over the years the farm grew into one of the region's benchmarks, and in 2019 their son Jhoan Vergara took it onto the world stage — winning the Master of Coffee competition with his Pink Bourbon and cementing the family's reputation.
Jhoan now drives the farm's innovation, bringing in exotic varieties like Sidra, Java and this one, Bourbon Ají. Grown here at 1,750 metres, it reflects the curiosity and precision that define his approach. Every lot runs under tight technical control, pairing controlled fermentations with cultured bacteria and thermal shocks to draw out the bean's aromatic expression. Las Flores represents a new generation of growers who treat coffee as both a science and a craft, where tradition and experimentation meet.
The process behind this lot is detailed. The cherries get 12 hours of oxidation before pulping, then a thermal shock at 50°C that fixes the aromatic compounds. From there the coffee ferments for 80 hours in controlled tanks with inoculated bacteria, and finishes in dehumidifying dryers over 60 hours down to 10% moisture. The result is high sensory intensity with a sweet structure and clear acidity, the process lifting the floral, fruity and citric notes typical of the Acevedo terroir.
In the cup it's intense and layered: muscat grape, cocoa butter and lemon verbena lead, with bright acidity over a silky body. As it opens up, peach, caramel, strawberry lollipop and lime peel come through — vibrant and complex, but elegantly balanced.
