Finca Las Flores in Acevedo, Huila is the family project of Edilberto Vergara and Nubia Ayure, now led by their son Jhoan Vergara, who has transformed the farm into one of Colombia’s most innovative coffee producers. Since studying at SENA, Jhoan has introduced a range of exotic varieties—including Bourbon Sidra—while refining fermentation techniques with a focus on precision and microbiological control. His work gained international recognition after winning the Master of Coffee competition in 2019 with a Pink Bourbon lot, placing Finca Las Flores firmly on the global specialty map.
This Bourbon Sidra lot is processed using a highly controlled experimental natural method. Cherries undergo 12 hours of initial oxidation, followed by 48 hours of submerged fermentation in a controlled environment. A thermal shock at 50°C is then applied to stabilise fermentation and fix aromatic compounds, before a second 24-hour oxidation stage. Drying begins with 24 hours in a mechanical dryer, followed by 15 days in a canopy until optimal moisture is reached.
The cup is intense, layered and highly expressive, with notes of lychee, pineapple and mango supported by cocoa nibs and citrus peel. A bright, high acidity is balanced by a dense, velvety body, leading to a long, structured finish. An advanced, modern profile that reflects the experimental precision of Finca Las Flores.
