People Possession – Industrial Supply Series [GREEN] {Filter} 200g | Colombia

GREEN is part of People Possession's Industrial Supply Series.

Behind it is Jairo Arcila, a Colombian producer whose experimental lots turn up across a lot of the roasters worth paying attention to. This is his Castillo, grown in Quindío between 1400 and 1500 metres.

The process is a honey co-fermentation, run with wine yeast and green apple. The apple is not a tasting note dressed up as a technique — it goes into the ferment, and it shows.

The cup is bright and sweet in a deliberately artificial-leaning way: apple soda first, then candy, with berries underneath. It is a coffee that knows exactly what it is.
