TANAT – El Sueño [Decaf] 200g | Mexico

El Sueño is TANAT's decaf, grown in Chiapas in the far south of Mexico at 1200 metres and above. The varieties are Typica, Bourbon and Caturra.

It is a washed coffee, and the decaffeination is done using the mountain water process and no solvents at all — a gentler route than the chemical methods still common in decaf, and one that leaves more of the coffee's own character intact.

TANAT roast it for espresso. Chocolate runs through the middle of it, with caramel behind. They score it 81.
