TANAT – Elto Elora [Anaerobic 72h] 200g | Ethiopia
Elto Coffee is the couple's own label, run by Eliyas Dukamo and Atiklit Dejene from Sidama Bensa — this particular lot is produced under Alo Coffee, a sister label of theirs, from parcels sitting at 2,200 metres, high enough that slow cherry development is baked into the coffee before processing even starts. The varieties are 74112 and 74110, two of the JARC-developed cultivars that have become closely associated with Sidama and Guji's more distinctive lots over the last decade.
Processing here is a 72-hour natural anaerobic fermentation: cherries are picked at full ripeness and sealed into airtight tanks before drying, rather than laid out to dry immediately as a standard natural would be. Sealing out oxygen for that long changes how the sugars in the cherry mucilage break down, and it tends to push a natural's fruit character toward something brighter and more precise rather than simply heavier — which shows clearly here. After fermentation, the coffee is dried slowly on raised African beds.
The cup is genuinely vivid: bright, juicy acidity carried by mandarin and star fruit up front, moving into a delicate strawberry-flower florality in the middle, and finishing zesty and luminous with pomelo. It reads as an explosive, fruit-driven cup rather than a subtle one — closer to biting into the fruit itself than tasting a suggestion of it.
This is a coffee for people who want their Ethiopian naturals to lead with brightness and precision rather than heavy stone-fruit sweetness. It's from the 2025 harvest and scored 88.
