About This Coffee
Hacienda La Papaya is one of Ecuador's most precise and ambitious specialty farms — founded by Juan Peña in 2010 in the Andean highlands of Saraguro, Loja, at 1,900 to 2,100 metres. Peña approaches coffee production with the rigour of an agronomist: drip irrigation, sensor monitoring, controlled drying rooms, and a genetic bank preserving some of the world's most sought-after varieties, including Geisha, Sidra, and Typica.
This lot highlights Typica Mejorado — a refined, more vigorous iteration of the classic Typica. It's processed using a clean washed method with a 15-hour fermentation window: long enough to develop flavour, short enough to preserve the clarity that makes Typica shine. The result is exactly what the best Ecuadorian filter coffees do well — composed, lucid, and gently sweet.
Pear and maple syrup carry the cup, balanced by a clean citrus note of orange. Round body, moderate acidity, a coffee designed to be understood slowly.
